Instant Pot Chocolate Malt Cheesecake? Yes, please!

I got an Instant Pot for Christmas and have used it pretty much every week since then to do meal prep for lunches. It's become part of my Sunday ritual... I watch racing and do meal prep for the week with the Instant Pot! My boyfriend doesn't like Indian food and I do, so a lot of my meals have been Indian-inspired, which is INCREDIBLY easy in the Instant Pot! But I also ventured into other styles of food. Making the venturing out even easier is the fact that I have a friend who is a "Pot Head," which, come to find out, is a person completely obsessed with their Instant Pot. She certainly is that! Ever since I got mine, she has been sharing some great recipes with me. She hasn't had a "miss" yet! Everything has been spectacular.

But this recipe... this really caught my eye. She jokingly had a "no baking" recipe, but she was compelled to try this and she has been raving about it ever since. She then sent me the recipe, and while I admit I haven't tried it- only because I need to have somewhere to take this to share with others, otherwise I would eat the whole thing- I can't wait for the day when I am in the kitchen trying this out!

In the meantime, I thought I would share it here in case you need an easy desert recipe for your Instant Pot. I present to you (insert dramatic drum roll here...) Instant Pot Chocolate Malt Cheesecake.

WHAT????? Oh my goodness this looks and sounds PHENOMENAL!!! And my friend with great Instant-taste said it is, soooo...

The video below will show you how to make it. But as far as the ingredients go:

Crust-15 whole Oreos and 3 tbsp butter

Cheesecake- 2 bricks of cream cheese, 1/4 cup brown sugar, 1/4 cup white sugar, 2 eggs, 1/4 cup sour cream, 1 cup melted chocolate chips, 1 tsp vanilla, 1 tbsp flour, 1 tbsp coca, 1/2 cup chocolate malt milk powder (which you can omit if you don't want the "malt")

Topping-1 cup of melted chocolate chips, 1/2 heavy whipping cream

And a hint... while the video says to let chill for a minimum of four hours, my friend refrigerated overnight and it was perfect.

Enjoy!
